Sesame Soy Chicken

Sesame Chicken Main

Last night I had to make something quick and easy for dinner so I put some stuff together and made this delicious sesame soy chicken! I had dinner ready in under 30 minutes and it was amazing! I made rice in the rice cooker and added about a tbsp of coconut oil to give it that smooth, somewhat buttery flavor. I also made broccoli in the rice cooker’s steamer attachment. Meanwhile, I started making this amazing chicken. Once I placed it in the hot pan, I had a few minutes to set the table, I came back to mix it around a little, and voila! Chicken, rice and broccoli ready for dinner!

Ingredients

Yields 2-4 servings
  • 3 tbsp soy sauce
  • 3 tbsp mirin (rice cooking wine)
  • 1 tbsp water
  • 1 tbsp toasted sesame oil
  • 2 tbsp ketchup
  • 3 tbsp brown sugar
  • 1 tbsp minced garlic
  • 3/4 tsp ground ginger
  • 2 tsp cornstarch
  • 2 boneless & skinless chicken breasts
  • 1 tbsp oil (for cooking)

Directions

1. Cut the chicken breasts into 1/2 inch cubes.

2. In a bowl, mix the soy sauce, mirin, water, toasted sesame oil, ketchup, brown sugar, minced garlic, ground ginger, and cornstarch

3. Place the chicken cubes in the bowl with the liquid mixture.

4. In a skillet or pan, heat up 1 tbsp oil over medium-high heat. Pour chicken and marinade into the skillet.

5. Cook until the bottom starts to brown, then flip or mix until the chicken is cooked through.

6. Serve with white rice and steamed broccoli.
